Chicken Pizza with Basil and Onions


This is so fast and easy I'm not sure I'll ever order delivery again!!! I buy pizza dough by the bag at De Luca's. They sell whole wheat and regular in a bag...a dough ball is just about the size of a grapefruit and is large enough to cover a standard cookie sheet! They sell the dough for $2.50 per bag and you can toss it in the freezer for when you need it. Then, when I want to make pizza I take it out, defrost in the fridge and I'm good to go!
Chicken Pizza with Basil and Onions
Serves 6-8

Prep Time: 30 minutes
Cook Time: 15 minutes
Total: 45 minutes

Ingredients
Pre-Made Store bought pizza dough
1 medium onion
2 boneless, skinless chicken breasts
3/4 cup pizza sauce
6-8 basil leaves, shredded
Mozzarella cheese

Directions
Start with the onions as they take the longest. Peel a yellow or white onion, cut it in half and slice very thin. You should be able to almost see the blade of your knife through each slice. Put onions in a pan over medium heat with 1 tsp oil, 1 tsp sugar and a pinch of salt.



Meanwhile, season two boneless, skinless chicken breasts with salt and pepper. Brown in a pan over medium high heat until almost cooked through. About 4 minutes a side. Don't worry if chicken is not cooked all the way through it will finish cooking in the oven on the pizza.


Once chicken and onions are browned....about 10-15 minutes for the onions and 8-10 for the chicken...remove from heat.


Slice chicken into bit sized pieces.


Place defrosted dough on a cookie sheet lined with parchment paper sprayed with non stick spray....spread out and stretch doughto cover cookie sheet. (I hold it up in the air to do this and let the weight of the dough do the stretching).


Cover dough with pizza sauce of your choice...I used just regular pizza sauce from the can but you can use this, alfredo, ranch or even BBQ sauce! Top sauced dough with caramelized onions and chicken.


Toss shredded basil over chicken.


Mozzarella Cheese.


Bake your pizza in a 500 degree oven (I have a sneaking suspicion that my oven doesn't really go this high, no matter what the display says...I bet it's more like 450) so my timing here might be a bit off...so keep an eye on your pizza and remove from the oven when it looks done....start with 10 minutes and go from there...mine took 15.

Remove from oven and let cool slightly before serving!
