Warm Asian Turkey Lettuce Wraps



Warm Asian inspired turkey filling is tucked into crisp lettuce leaves and eaten.  This meal is quick, easy and healthy - but its versatile too!  Increase the amount of noodles and omit the lettuce for a quick stir fry - pile the turkey filling on a finely shredded cabbage slaw or baby spinach for a warm noodle salad! You could even prepare as is and use as a spring roll or summer roll filling!

I've used oyster sauce to flavour the turkey but you can substitute additional hoisin if desired.

Warm Asian Turkey Lettuce Wraps

Cook Time:  15 minutes
Total Time: 25 minutes

Serves 2-4

Ingredients
1 lb ground turkey
1 tbsp oil
3 cloves garlic, minced
3 tbsp oyster sauce
2 tbsp hoisin sauce
3 tbsp white vinegar
1 tbsp sriracha (or hot sauce)
1 carrot, julienned
1/2 cup minced red onion
2 cups bean sprouts, chopped
3 green onions, chopped
1 cup shrimp, peeled and chopped
1/2 cup roasted peanuts, chopped
Handful fresh cilantro, chopped
2 bundles bean thread noodles - cooked, rinsed, drained and chopped

Lettuce for wrapping 

Directions

  1. Heat a frying pan over medium heat - add oil and ground turkey.  Break up while cooking.  Add garlic and cook 10 minutes or until no longer pink.
  2. Add oyster sauce, hoisin, vinegar, sriracha.  Stir to coat turkey.  Add carrot, red and green onions, bean sprouts, shrimp, peanuts and cilantro.  Cook 5 minutes or until vegetables warm but still crispy.
  3. Meanwhile, boil noodles until tender, rinse and drain.  Chop roughly.  Add to pan with turkey.  Toss to combine.
  4. Serve turkey mixture wrapped in lettuce with additional peanuts, cilantro and hot sauce if desired.
