Ahi Tuna Tacos



This is a quick and easy week day meal using an possibly unusual ingredient!  Instead of chicken or beef in these tacos we're using Ahi Tuna.

You can find this fresh or frozen nowadays at most fish markets or well stocked grocery stores.  It sears very quickly, and like steak, can be cooked to a desired done-ness.

Each taco is topped with lightly seared tuna, lettuce and tomato and wasabi lime mayo - all made in less than 15 minutes!



Ahi Tuna Tacos 
Serves 2

Prep Time 10 minutes
Cooking Time 1-2 minutes
Total 12 minutes

Ingredients

2 Ahi Tuna Steaks
2 tbsp lime juice
salt and pepper or seasoning salt to taste
1 small Romaine lettuce heart shredded
1 tomato chopped
2 tbsp mayo
1 tbsp plain yogurt
1 tsp lime juice
1 tsp wasabi paste
1 box hard corn taco shells
Hot Sauce


Directions
  1. Shred lettuce and chop tomato, set aside. Prepare wasabi lime mayo by combining mayonnaise, yogurt, lime juice and wasabi paste, mix well and set aside.
  2. Pre-heat a non stick skillet to medium high. Just before adding tuna spray the pan lightly with non-stick spray. Add tuna and splash with lime juice. Season the top of the filets with salt and pepper.
  3. Flip tuna after about 90 seconds to 2 minutes depending on desired done-ness.
  4. Once tuna is seared, remove from pan and slice with a very sharp knife.
  5. Heat taco shells in microwave until slightly warm, about 20 seconds.
  6. Layer tuna in each taco shell, top with lettuce, tomato, wasabi lime mayo and hot sauce of your choice!
