Mini Doughnut Cinnamon Sugar Muffins



There is nothing quite as delicious as a mini doughnut.  Hot, moist cake doughnut deep fried to greasy perfection doused with sugar and cinnamon.  This recipe attempts to at least somewhat replicate that in the form of a muffin.  Moist sweet cake, basted with melted butter then rolled in the familiar mixture of cinnamon and sugar.  Makes 12 large muffins but would work equally well in a mini muffin tin for charming mini - mini doughnut muffins.



Mini Doughnut Cinnamon Sugar Muffins
Makes 12 large or 24 mini muffins

Prep Time: 20 minutes
Cooking Time:  20 minutes
Total:  40 minutes

Ingredients

¾ cup sugar
1 large egg
¼ cup vegetable oil
¾ cup milk
1 tsp vanilla
1 ½ cups all purpose flour
2 tsp baking powder
¼ tsp nutmeg

¼ cup butter, melted
¾ cup sugar
1 tbsp cinnamon


Directions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine sugar and egg. Beat until light and frothy. Add vegetable oil, milk and vanilla.
  3. In another bowl combine flour, baking powder and nutmeg. Combine wet and dry ingredients, mixing until the dry ingredients are just moistened, do not over mix.
  4. Grease a muffin tin or line with paper liners. Bake for 18-20 minutes or until a tooth pick inserted in the centre of a muffin comes out clean.
  5. Allow muffins to cool slightly until able to handle. Meanwhile, stir together sugar and cinnamon until well combined. Brush tops, bottoms and sides with melted butter. Roll each muffin in cinnamon sugar mixture.
