Macaroni and Cheese

Almost as fast as the box!  Use any cheese you like in this quick and easy version of a family favourite!  I chose cheddar and mozzarella as it's what I had on hand but you can really use whatever you like from velveeta to fontina and gruyere.  You can up the spicing as well, this can be a very basic starting point if you wish - add worcestershire, dry mustard, hot sauce.  Top it with panko or seasoned bread crumbs and put it under the broiler to crisp - anything you wish really or make it just as is for rich, creamy, plain old good, mac and cheese.  

Macaroni and Cheese

Serves 4-6

Prep Time: 10 minutes
Cooking Time: 20 minutes
Total Time: 30 minutes

Ingredients750 grams macaroni, boiled
1/2 cup margarine or butter
1/2 cup flour
2 cups milk
2 cups chicken stock
1 tsp onion powder
1 tsp seasoning salt
6 cups grated cheese (Example: 4 cups cheddar and 2 cups mozzarella)

Directions
  1. Set macaroni to boil in salted water in a large pot over high heat.  Meanwhile, make a roux by melting margarine or butter in another large pot over medium heat.  Add flour and stir to combine. 
  2. Once well combined, cook 2-3 minutes to cook flour, then add milk and chicken broth.  Stir or whisk to eliminate lumps.  Add seasoning and cheese, stir until smooth.  Pour over cooked pasta!
