Sweet and Sour Pork Tenderloin


This is a quick recipe and a different way to serve pork tenderloin.  The loin is butterflied and pounded thin for fast cooking then serves with a sweet and sour sauce.  Serve this over rice or noodles or with added vegetables for a quick and easy meal!

Ingredients
1 1/4 cups brown sugar
1/3 cup water
1/3 cup vinegar
1 1/2 tbsp soya sauce
1 1/4 tbsp cornstarch
1 1/2 tbsp water
1 small Pork tenderloin
6 garlic cloves, minced
1.  Slice pork tenderloin lengthwise, but not all the way through and open like a book.  Place tenderloin between two pieces of plastic wrap.  Pound to about 1/2-3/4" thickness and rub with minced garlic.  Set aside.
2.  While the tenderloin is absorbing flavour from the garlic, prepare the sauce!  To a small saucepan over medium heat add brown sugar, first amount of water, vinegar and soy sauce.  Bring to a boil and stir until sugar is dissolved.
3.  Mix cornstarch and second amount of water together.  Then stir into brown sugar mixture.  Bring back to a boil and simmer until thickened.  Remove from heat.
 
4.  Heat a frying pan over medium high heat and add 1 tbsp of oil.  Add tenderloin into the pan. 
5.  Cook tenderloin for 2-3 minutes, then flip.  After another 2-3 minutes add sweet and sour sauce to the pan.
 
6.  Simmer pork in the sweet and sour sauce for 6-7 minutes more or until cooked through.  Remove from pan and slice. 
Toss back in sauce if desired and serve over rice or noodles!
For a complete meal, toss chopped bell pepper, onion and even pineapple in with the tenderloin just before adding sauce!  Or top a bowl of deluxe ramen noodles with slices of pork and drizzle with sauce!
