What's For Dinner? Feta and Tomato Orzo, Green Beans and Red Snapper


This whole meal comes together in less than 30 minutes and the orzo is great as leftovers.  If you've never used orzo before, it's a small rice shaped pasta but if you can't find orzo, any small pasta will do!  Salty Feta and Sweet tomato compliment each other well in the pasta - seared snapper and a side of green beans make a complete meal!

The pasta recipe serves 4-6 as it's great for leftovers, the others serve 2 but are easy to scale up!
Feta and Tomato Orzo

2 cups orzo pasta (dry)
1 large can diced tomatoes
150 grams feta cheese
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried chili flakes
Set a large pot of salted water over high heat to boil.  When at a rolling boil add orzo to pot.  Cook for aprox. 6 minutes then drail and set aside.
 
In the same pot, over medium heat, add olive oil, garlic and chili flakes.
Once garlic is sizzling, add tomatoes.
 
Crumble feta into tomato sauce.
  
Stir orzo back into sauce to heat through and serve!
 
With the lid on the pot, the orzo stays warm until the rest of the meal is ready.
Spicy Green Beans

Green Beans - a generous handful
1 tbsp olive oil (chili oil is nice, but not necessary)
1 clove of garlic
1/2 tsp dried chili flakes
pinch salt
Bring water to a boil in a deep frying pan.
  
Simmer for 3-5 minutes or until tender but still crisp.  Drain beans and set aside.
In the same pan, add olive oil, garlic and chili flakes.
When garlic is sizzling, add drained green beans.  Saute until greens are slightly browned and fork tender, about 2 minutes.  Serve!
Pan Seared Red Snapper Filets

2 red snapper filets
1/3 cup flour
1/2 tsp chili flakes
1 tsp club house - vegetable seasoning (or any seasoning mix you have on hand - seasoning salt would work well, or even salt and pepper)
2 tsp butter
Mix seasoning with flour and dredge filets to coat.
 
Heat a frying pan over medium high heat and add butter.  When butter is melted add fish and cook 3 minutes, flip and cook another 3 minutes or until browned and cooked through.
 
Serve with orzo and spiced green beans.
