Chicken Bacon Pizza

A different spin on pizza - quick and easy to make at home.  Start with fresh pizza dough, we buy ours pre-made locally, and a ball the size of a grapefruit covers a large cookie sheet.  heating your oven as high as it will go, in our case 500 degrees celsius, produces a crust with a crisp bottom and delicious chewy texture.  Chicken and basil are an interesting spin on a classic.

Chicken Bacon Pizza

Cook Time: 20 minutes

Ingredients
1 ball of fresh pizza dough
2 chicken breasts
salt, pepper and seasoning salt to taste
1/4 cup fresh basil shredded
1 white or yellow onion sliced
3 slices bacon, chopped
1/2 - 3/4 can tomatoes drained
400 grams mozzarella cheese shredded or diced

Directions
  1. Heat the oven to 500 degrees. 
  2. Spread crust out onto a cookie sheet or pizza pan. If you're using a cookie sheet, line it with parchment paper and give it a spray with non-stick spray. 
  3. Cut 2 chicken breasts in small bite sized pieces and season with salt, pepper and seasoning salt.
  4. Cook chicken in a frying pan until brown but not cooked all the way through - about 5 minutes (chicken will cook the rest of the way in the oven).
  5. Top pizza crust with canned tomatoes, squeezed of all excess juices (we use about 1/2-3/4 of a can but it will depend on how large your crust is).
  6. Add chicken and sliced white onion to the pizza, top with shredded basil, bacon and anchovies if desired.
  7. Top with shredded or cubed mozzarella cheese.
  8. Bake in the oven for 20 minutes or until browned and bubbly. Allow to cool 10 minutes to set before cutting.
