Spaghetti with Lemon and Anchovy

Don't worry, this isn't fishy! The anchovy paste adds a salty richness to the pasta sauce. Anchovy paste is also a great addition to a basic fresh tomato sauce for the same reason.

Spaghetti with Lemon and Anchovy
Serves 1

Ingredients
Spaghetti to Serve One
2 tbsp olive oil
1 clove garlic, minced
1/2 tsp chili flakes
Zest and Juice from 1/2 lemon
1 tbsp anchovy paste
1/2 cup fresh parsley, chopped

Directions
  1. Boil pasta in a large pot.
  2. Add 2 tbsp olive oil to a frying pan over medium low heat. Mince and add 1 large clove of garlic and 1/2 tsp chili flakes. Cook until garlic is fragrant but not browned.
  3. Add anchovy paste and stir to melt anchovy into the oil.
  4. Zest and squeeze half a lemon and add the the oil and anchovy in the frying pan.
  5. Toss cooked pasta in the frying pan and coat with oil. 
  6. Top with parsley and serve!
