Coconut Ginger Cocktail

You can make a thousand different cocktails with this base recipe. Simple Syrup. Basically you dissolve 1 part sugar into 1 part water. This process is made even easier with the introduction of heat. But, if your going to the work of making your own simple syrup why not infuse it with some flavour too! Like Ginger and Lime!
Coconut juice can be found in the Asian section if any grocery store, in this recipe I've used the sweetened variety (if the variety you choose has pulp - strain it out) but you can use unsweetened if you wish. Add the spirit of your choice to this tropical cocktail for a delicious, refreshing summer beverage!

Coconut Ginger Cocktail

Serves 4

Ingredients
1 cup sugar
1 cup water
2" piece fresh ginger, grated
1/4 cup lime juice
12 oz can coconut juice
6 oz rum, tequila or vodka
Ice

Directions
  1. Start with a small sauce pan over medium-high heat. Add water and sugar. Bring to a simmer.
  2. Meanwhile, grate the ginger – the ginger does not need to be peeled, the mixture will be strained later.
  3. Add ginger, along with lime juice to the pot and simmer over medium heat for 8-10 minutes. 
  4. Strain the syrup thru a sieve into a heat proof measuring cup or bowl. Press the ginger pulp with a spoon the extract all the syrup. 
  5. Allow the syrup to cool in the fridge. 
  6. Fill blender with ice cubes. Pour coconut juice into the blender with 3/4 cup of the ginger syrup just prepared and spirit of your choice. Blend thoroughly – pour into four glasses to serve.
