Coconut juice can be found in the Asian section if any grocery store, in this recipe I've used the sweetened variety (if the variety you choose has pulp - strain it out) but you can use unsweetened if you wish. Add the spirit of your choice to this tropical cocktail for a delicious, refreshing summer beverage!
Coconut Ginger Cocktail

Ingredients
1 cup sugar
1 cup water
2" piece fresh ginger, grated
1/4 cup lime juice
12 oz can coconut juice
6 oz rum, tequila or vodka

Directions
- Start with a small sauce pan over medium-high heat. Add water and sugar. Bring to a simmer.
- Meanwhile, grate the ginger – the ginger does not need to be peeled, the mixture will be strained later.
- Add ginger, along with lime juice to the pot and simmer over medium heat for 8-10 minutes.
- Strain the syrup thru a sieve into a heat proof measuring cup or bowl. Press the ginger pulp with a spoon the extract all the syrup.
- Allow the syrup to cool in the fridge.
- Fill blender with ice cubes. Pour coconut juice into the blender with 3/4 cup of the ginger syrup just prepared and spirit of your choice. Blend thoroughly – pour into four glasses to serve.
