Shaun makes this spicy tomato rice as a side dish all on its own or as a filling for chicken enchilada or burritos. It comes together quickly and is easily adapted to any seasoning you may like to use! Shaun uses a cajun seasoning blend here but you can use any pre-mixed seasoning mix you like.
Add cooked sausage, chicken, or pork for a complete meal!
Spicy Tomato Rice

Ingredients
1 tbsp oil
1 slice bacon, minced
1 tsp minced garlic
1 chopped onion
2 medium tomatoes chopped
1/2 cup white rice
1 cup water
1/2 cup chicken stock
1 tbsp creole or cajun seasoning
1 cup water
1/2 cup chicken stock
1 tbsp creole or cajun seasoning
Directions
- Add oil to a frying pan over medium heat. Add bacon, about 1 slice, minced garlic, and chopped onion. Dice and add tomatoes.
- Once vegetables have slightly softened add white rice.
- Add water and chicken stock.
- Add creole or cajun seasoning of your choice.
- Cover and simmer rice on low heat until tender...about 10 minutes adding more liquid if required.
