Saltine Toffee Bar


Don't knock it till you try it! I stumbled upon this unusual treat (what do you call this, a cookie? A square?...) on The Parsley Thief and it seemed similar to something an Aunt of mine used to make with graham crackers so I had to give it a try.

The salty crackers and sweet toffee make a great combination...feel free to top it with nuts, a drizzle of white chocolate or whatever tickles your fancy!



Saltine Toffee Bar

Prep Time: 5 minutes
Cooking Time: 10 minutes (plus 30-45 minutes cooling)
Total Time:  15 minutes (plus cooling time) - about 50 minutes total

Ingredients
1 Sleeve of saltine crackers -- or enough to cover a cookie sheet
3/4 cups butter
1 1/2 cups brown sugar, packed
2 cups semi-sweet chocolate chips

Directions

  1. Pre-heat oven to 350 degrees.
  2. Line a cookie sheet with aluminium foil and spray with non-stick cooking spray.  Lay out saltines in a single layer to cover.
  3. In a sauce pan, combine butter/margarine and brown sugar.  Bring to a boil over medium heat and boil for 5 minutes or until the sugar is completely dissolved and the mixture if fully combined.
  4. Pour sugar mixture over prepared saltines and spread out with a spoon to cover the entire surface of the crackers.
  5. Bake for 5 minutes or until toffee bubbles.
  6. Remove from oven and top with chocolate chips.  Allow to stand until chocolate chips are melting then spread over surface of crackers with a spatula.
  7. Allow to cool 30-45 minutes (this will go even faster in the fridge!)
  8. Break into pieces to serve!
